Cut limes with salt biscuits, sour rye and oyster shell. Minerality present on the palate, with tangy acidity and a bone-dry finish, lifted by fine bubbles. The Scintillas have the ability to age long term, but this is perhaps the best age to consume the 2014 while it still holds nervy freshness, complemented by developing savoury complexity.
